This week we say goodbye for the summer months to our long serving volunteer Ayshe as she goes to work uptown for the tourist season. She will, as ever, be back in October but until then Ayshe has left us with a fantastic Chicken Soup recipe made from the bits and bobs from the surplus food gift as part of the Neighbourly Project and a piece of chicken.
How to make chicken soup
Boil chicken prices with skin(thigh/leg)
Once boiled add;
one cup of plain ricehalf a cup of Vermicelli
chopped vegetables
two chicken stock cubes and bring to boil
Serve with lemon and parsley
